For thousands of years\, Sicilians have patiently waited until fungi season\, and then harvested wild mushrooms from the country’s forests – adding the treasures to pastas\, sauces\, salads\, risottos\, pizzas\, soups and more. Meanwhile\, thanks to fertile earth surrounding Mount Etna\, chestnuts and truffles can be found in enviable abundance. Chestnuts are the quintessential street food of Sicily\, while truffles are the most valued food on earth. King salmon is a special and very rare species\, making up less than one percent of the world’s salmon supply. The Ōra King breeding programme has developed specific and unique traits that distinguish them from other king salmon\, making the Ōra King name a unique and independently recognised breed. The high oil content in this breed can be seen in the striking marbled fat lines within the bright orange flesh\, instantly drawing comparison to Wagyu. \nJoin chef patron Lino Sauro for a specially designed 6-course Ōra King degustation\, expertly matched with local and Italian wines.
