For one unforgettable evening, these two Italian chefs — one proudly Sicilian, the other Italian-born with international acclaim — will come together in a friendly culinary competition, each presenting their own interpretation of Italian cuisine. Expect bold creativity, heartfelt tradition, and a shared passion for flavour as the past and present of Olio meet in the kitchen once more.

Lino Sauro – Founder of Olio Kensington Street & Gattopardo, Singapore
Born in Sicily, Lino Sauro is one of Australia’s most respected Italian chefs, celebrated for his refined take on Southern Italian cuisine. His menus draw deeply from his heritage — highlighting seasonal seafood, olive oil from his family’s Sicilian farm, and the island’s distinctive ingredients such as wild fennel, saffron, and raisins.
After launching his first solo venture, Gattopardo, in Singapore, Lino opened Olio Kensington Street in 2017, where his philosophy of simple elegance and respect for provenance helped define the restaurant’s identity. His cooking bridges the warmth of Sicilian tradition with contemporary finesse, making him a driving force behind Sicilian cuisine’s growing global recognition.
Pietro Epifani – Head Chef, Olio Kensington Street
Italian chef with a distinguished international career, Pietro Epifani brings together high-end technique and Mediterranean creativity. His formative years include working at the two-Michelin-starred restaurant Sadler in Milan, where he refined his skills under rigorous standards of excellence. Pietro has collaborated with acclaimed Michelin chefs such as Pepe Solla, Sergio Zarate, Beñat Ormaetxea, and Álex Ortiz (chef of Real Madrid CF).
A graduate of the Basque Culinary Center, Pietro values teaching and sharing his knowledge with his international team. Based in the Canary Islands before joining Olio, his work earned him a nomination for “Best Chef de Canarias 2023” and recognition in the Guía Repsol, Guía Michelin, and Guía Qué Bueno Canarias. His cuisine fuses his Italian roots, deep engagement with local produce, and refined gastronomic technique.
