Olio opened its doors in 2017 with a vision to showcase the beauty of modern Italian cuisine in the heart of Sydney. Located in the heritage-listed Old Rum Store on Kensington Street, Olio offers a warm and elegant space where timeless Italian flavours meet contemporary culinary craft.
Today, a team of passionate Italian chefs lead the kitchen, drawing on tradition, creativity, and seasonal produce to deliver an evolving menu rooted in authenticity. From handmade pasta to delicate seafood dishes, every plate reflects a deep respect for Italian culinary culture.

THE DESIGN
Designed by international award-winning architects LAVA (Masdar, Martian Embassay), Olio Ristorante has both indoor dining and a sought-after rooftop terrace. Lush olive trees and views across the rooftops of Kensington Street and the vertical garden of Central Park make this a sought-after space.
The interiors feature a neutral colour palette with hints of Mediterranean blue and olive green. LAVA use the exposed brick and loft-style windows of The Old Rum Store to Olio Ristorante’s advantage and fill the interior with light oak timber and Sicilian tiles to reflect the casual feel of the restaurant. A tiled ‘passeggiata’ (promenade) curves through the restaurant and connects the kitchen, bar, dining and rooftop areas.
Olio Ristorante is the newest addition to the historic Old Rum Store restoration which will officially launch in the first quarter of 2017 as a multi-layer food, drink and cultural destination in the vibrant Kensington Street precinct.

This outdoor, rooftop dining is the perfect venue to a enjoy a lunch, dinner, or have a glass or two with your loved ones. The exposed brick walls, cool breeze, and natural lighting will transport you straight to Sicily.
