‘Four Hands’ Chef Collaboration:

OLIO x OSTERIA IL COCCIA

For one night only, Olio and chef Lino welcomes chef Nicola Coccia – Executive Chef of restaurant Osteria il Coccia – Ettalong beach to bring you a collaborative gastronomic menu presenting the best of Italian and Sicilian cuisine.

Nicola’s passion for cooking stems from his fond memories of his grandmother rolling fresh sheets of pasta in her kitchen in his home town of Naples. This is where he learnt to handle every ingredient with passion, respect and love. He trained in Italy before working in some of NSW’s best kitchens including; Biota, Ormeggio, Quay, Otto and, most recently, the chef-hatted Bistro Officina in Bowral, which he ran with his French wife, Alexandra.

Nicola’s philosophy is ‘food needs little intervention, just a little love and a little heat (fire).’ He is one of the only chefs in Australia to have a kitchen built around fire.

This carefully curated 6-course degustation will take you on a journey from Naples to Sicily. Maybe this night will answer the question, ‘why Sicilian is not Italian’
